- 1 c quinoa, uncooked
- 1 large cucumber, diced
- 1 can black beans, drained
- 1c grape tomatoes, halved
- 4 c cilantro, chopped
- 1/4 c red onion, chopped
- 1/4 c olive oil
- 1 Tbsp red wine vinegar
- 1 Tbsp lime juice
- 1 tsp dijon mustard
- 1 garlic clove, minced
- 2 Avocados, sliced
- Salt, pepper; to taste

Greek Chickpea Salad
- 1 can garbanzo beans
- Cucumber, chopped
- Tomato, chopped
- Greek olives
- Tzatsiki sauce
- Dill, chopped
Blend together, stir in tzatziki sauce. Enjoy!
Healthy Avocado Toast
- 8 oz ripe avocado
- 2 tsp. sea salt and pepper
- 1/2 tsp crushed red pepper flakes
- 2 slices rustic sourdough bread
Cut, peel and pit avocado. Mash with a fork. Add salt, pepper and red pepper flakes. Spread 2 Tbsp mixture on bread. Enjoy!
